Humans’ diets used to be rich in potassium, but our levels of dietary potassium have steadily decreased as we’ve introduced more and more processed foods and have begun eating fewer fruits and vegetables. Scientists have recently begun to speculate that our low levels of potassium consumption may be linked to issues such as osteoporosis and heart disease.
A paper presented at an American Society of Nephrology conference in 2008 pointed out findings that suggested that it is important that we begin monitoring potassium levels in the blood as a preventative measure to ward off high blood pressure.
